Food Evolution was founded by fast food veteran and Bergen County native, Tony Santarelli. After the birth of his daughter Ava, he and his wife were overwhelmed at the lack of restaurants with ingredients they approved of and tastes Ava would actually eat. They felt a profound sense of responsibility to create something better for their community and their family.
After months of researching local farmers and bakers, testing recipes and building a passionate team of ec0-conscious foodies, Tony successfully launched Food Evolution. Unlike most restaurants owners, Tony proudly boats where he sources his ingredients. From The Hungry Hollow Co-Op product to Bathazar Bakery bread, his dedication to his sourcing partners allows his team to develop hand crafted and delicious meals they could be proud of.
